There are two types of yogurt: one is cheese, or daxue in the Tibetan language, which is made of milk from which ghee has been extracted; the other is exue which is made of unprocessed milk. As a milk product in which the sugar has been broken down, yogurt boasts a higher nutrition value and is easier to digest; thus, it is ideal for the elderly and children. Milk curd is made of the remnants of milk after ghee is extracted from it and it undergoes boiling and evap­oration.

It can be processed into milk cakes and milk biscuits. In heating milk, a thin layer of milk film can also be lifted from it. Like tofu sheets, milk film is both delicious and nutritional. Dairy products are important foods for Tibetan people. Wherever they go, they take them along. In Tibet, parents usually give children milk curd as a snack.
